Marinated Chicken with Greek Yogurt Sauce

Earlier this week I had a "sauce" recipe in my head I just couldn't get out. Of course, I had to try to make it! And to my happy surprise it turned out so good. Like seriously good. Like make it again good. I hope you enjoy!



Marinade:

1/4 Cup (real) Olive oil
1/4 Cup lemon juice
1/4 Cup vinegar
1 Tablespoon minced Garlic
1 Teaspoon Red Pepper Flakes
1 Teaspoon Oregano
1 Teaspoon Salt
1 Teaspoon Pepper

Mix marinade with 3 or 4 chicken breasts. Let marinate covered in the fridge for about an hour.

While marinading the chicken, make the sauce (this only will take about 10 minutes or less)

Sauce:

1/2 Cup Plain Greek yogurt
1/2 Cup Crumbled Feta cheese
1/2 Cup chopped Cucumber
1/4 Cup combination of fresh mint and fresh parsley, loosely packed
2 Tablespoons lemon juice
1 Teaspoon Kosher salt
1 Teaspoon Pepper

After chicken has finished marinading cook in a skillet or grill pan until chicken is cooked through.

Serve sauce on top or side of chicken. Pictured is the chicken and sauce with a bed of Arugula mix and chopped tomatoes.














Roasted Broccoli

While this recipe is neither difficult nor fancy, it is a staple in our house! For mostly one reason: it is so deliciously simple!  Growing up I never really cared for broccoli - just ask my dad about me having to sit at the dinner table until I ate my (then cold) broccoli. However, now it is one of my absolute favorite veggies! I can't get enough!











Ingredients:

2 large crowns of broccoli
2 tablespoons (real) olive oil
2 teaspoons kosher salt


Directions:

Preheat oven to 450 degrees.

While oven is preheating, cut broccoli into bite-sized florets.

Toss together olive oil and broccoli.

Spread onto large rimmed baking sheet.

Sprinkle on salt evenly.

Bake in oven for 25 minutes.

Enjoy immediately!

If you're anything like me you'll probably munch on it as soon as it's out of the oven  - looking for the perfectly browned and slightly crisp piece!

Pasties!




I love pasties! They are super easy to make - and super filling. They can be as ordinary as you want or as crazy {delicious} as you want!

First, make a pie crust.

3 Cups All Purpose Flour
1 1/2 Cups Crisco (Butter flavor)
2 Teaspoons Kosher Salt
1/2+ Cup water

1. Combine all except water, mixing with {clean} hands. Your dough will not combine yet - and don't force it. Your Crisco should be in pea-sized chunks throughout the flour/salt.

2. Add water slowly until you have a dough that will stick together well.

3. Divide dough into four equally sized balls.

4. Roll out each on a floured surface and set aside.

Preheat oven for 400 degrees.

Now for the filling...

1 lb meat of choice
3 med/large russet potatoes
Salt/Pepper/Spices to taste
Veggies, optional

5. Chop up whatever meat your heart desires and place in a bowl. The meat should be in small enough pieces that it cooks through since it is going into the dough raw.  I made my meat roughly the size of my pinky nail.  I used an inexpensive cut of steak.

6. Chop up potatoes to be about the same size as the meat. Put in your bowl containing the meat.

(6.5) You could stop here - adding salt and pepper and place into pie crust. OR you can add veggies and whatever spices you want. I added a little blue cheese into two of my four steak/potato pasties. Next on my to-do list for pasty making is lamb, potatoes, and sprigs of fresh mint leaves.

7. Place a quarter of your mixture into each pie crust.

8. Fold crusts in half and pinch/roll the edge to create a seal.

9. Poke some small holes in the top of your pasty with a fork.

10. Brush an egg wash onto your pasties.

 11. Bake in your 400 degree oven for 45-50 minutes.

Yes, the egg wash is necessary.

German Chocolate Cake

German Chocolate Cake... yum!


I made this cake this morning so my husband could take it into work for the other officers to enjoy. I must say, it turned out really well. I highly recommend it!

The chocolate cake recipe is one I had made back in February: Best Chocolate Cake

The frosting recipe is as follows:

In a saucepan, combine:

1 Can Evaporated Milk (12 oz)
1 Stick Butter
1 Cup Brown Sugar
3 Egg Yolks
1 Teaspoon Vanilla


Heat, stirring constantly until it becomes much thicker than it started... it will take 10-15 minutes. It will boil. Your arm will get tired. But! It's going to be worth it when you get to eat the cake.

Then, remove the pan from the heat and stir in 1 Cup Chopped Pecans (or Walnuts) and 1 1/3 Cups shredded sweet coconut flakes.

Let cool completely to room temperature before frosting your cake!

Snickerdoodle Pumpkin Cake


This cake is out of this world delicious! The pumpkin cake is very moist, and the buttercream isn't too sweet either! Just the right amount of creamy-ness and sweetness.

Snickerdoodle Pumpkin Cake

Ingredients for Cake:

15 oz. Can Pumpkin
1 C Vegetable Oil
4 Large Eggs
2 C Brown Sugar
2 C All Purpose Flour
2 Teaspoons Baking Soda
1 Teaspoon Cinnamon
1 Teaspoon Pumpkin Pie Spice
1 1/2 Teaspoon Kosher Salt

Ingredients for Snickerdoodle Buttercream:

1 Cup Milk
2 Tablespoons Flour
1 Cup Brown Sugar
1 Cup (Two Sticks) Butter, softened
1 Tablespoon Cinnamon
1 Teaspoon Vanilla Extract

Mix together all of your ingredients for the cake in a large mixing bowl.

Grease two 9-inch round cake pans, then pour your cake batter evenly between the two pans. Bake for 35-40 minutes at 350 degrees (or until done).

Make sure your cake cools before you frost it. While your cake is cooling is the perfect time to make your buttercream!

Stir together milk and flour until it mixes together completely. Then, pour it into a small sauce pan and heat until it boils. Take off heat and let cool. While milk/flour is cooling, cream your butter, brown sugar, cinnamon and vanilla. Then add in milk/flour.

Ice the cake and try not to eat too much - it's really that delicious!

Perfectly Pumpkin Fall Oatmeal

I LOVE fall! This morning I celebrated this love for fall (due to the chilly temperatures and some leftover pumpkin puree) with this deeeelicious oatmeal recipe that I made up :)


Ingredients:

1 Cup Pumpkin Puree
1 Cup Milk
1 Cup Water
1 tsp. Kosher Salt
3/4 tsp. Pumpkin Pie Spice
1 1/3 Cup Oats
Candied Pecans
Brown Sugar or Maple Syrup, to taste

In a saucepan, combine the pumpkin, milk, water, salt, spice. Bring to a boil.

Once boiling, add oats and cook for about 10 minutes.

When serving, top with sugar and candied pecans.

MMMmmmm Fall in a bowl!

Cinnamon Raisin Upside Down Coffee Cake




Cake Ingredients:

1 1/3 C Flour
2/3 C Brown Sugar
3 1/2 tsp Baking Powder
1 tsp Kosher Salt
1 tsp Cinnamon
Dash Allspice (Optional)
1/2 C Milk
2 Large Eggs
1/2 Stick (1/4 C) Melted Butter

Topping Ingredients:

1/3 C Rolled Oats, chopped
1/3 C Brown Sugar
1/3 C Golden Raisins, chopped
1/2 Stick (1/4 C) Melted Butter
2 tsp Cinnamon
1/2 tsp Kosher Salt

Directions:

Start by mixing together the dry ingredients of your cake (flour, brown sugar, baking powder, salt, cinnamon, allspice). Then, add in the wet ingredients.

Grease a 9in round cake pan.

Pour in cake mixture. Shake pan to make sure it is evenly spread.

Preheat oven to 350 degrees.

While oven is preheating, mix your crumble ingredients together.
(Don't forget to chop your oats and raisins!)

Spread crumble topping evenly over your coffee cake.

Bake at 350 degrees for 25 minutes
Let sit for 5-10 minutes before cutting and serving.
